Tony Burns has recently taken over the helm as Executive Head Chef after working at the 'Michelin stared' Chez Bruce in London, AA rosette award winning Circa and many 5* properties in Australia and France.
Pebbles is situated on the ground floor offering a modern restaurant with bar, styled in a contemporary design with panoramic sea views of Brighton beach and the channel. Pebbles offers unpretentious, good quality food using only the finest and freshest of local Sussex produce where possible with great service from our friendly and knowledgeable team.
The complete menu is available Monday - Friday and can be taken in the restaurant, bar or as room service.

K bar
Superb sea views, relaxing deep leather bucket chairs, extensive selection of drinks, K cocktails, wide-ranging wine list many of which are available by the glass, attentive service and most importantly open until the early hours*.
*strictly resident’s only after 11pm. The reception is manned 24 hours a day. After 11pm guests are required to show their keys cards.

Breakfast
Freshly orange juice, fair trade coffee or tea served to your table. Choose from a full Kings breakfast, pancakes layered with fresh berries maple syrup and low fat yogurt, smoked salmon & scrambled egg, whole Newhaven grilled kipper, poached haddock with poached egg, home-made granola served with ice cold milk or fresh fruit with low fat yogurt. We only use free range eggs!
7.00am – 9.30am midweek
8.00am – 10.30am weekends and bank holidays.
Courtyard
An enclosed ivy covered walled courtyard at the rear of the hotel available from May - September for residents until 10.00pm. Drinks and light evening snacks can be served upon request.
